Garlic, Olive oil, Chilly and Tiger Prawns Spaghetti
Ingredients: * Spaghetti * One piece of garlic * Olive oil * One red or green chilly chopped into rough pieces * 5 or 6 large prawns * Parsley * White wine
Method: Bring to boil a pot of water and add in about 150 gm - 200 gm spaghetti. Let the spaghetti cook (check with the instructions on the box for cooking time) until it is just done ("al dente"). Normally, this can take between 3 - 8 minutes depending on the brand of spaghetti you buy so check the instructions. In the meantime cut a piece of garlic into thin slices. Put a tablespoon of olive oil in a frying pan and fry the garlic under small fire until it is slightly coloured. Add in the cut chilly. Fry for another minute then add in the prawns and some white wine. Let cook another minute until the prawn changes colour - do not overcook the prawns or they will shrink and the meat will be tougher. Add in the cooked spaghetti with some parsley and mix eveything for a few seconds. Serve hot accompanied with a glass of chilled white wine.
